Roasted to Reveal, Not to Mask

At San Café, roasting is not a transformation, It is a revelation. Every lot we roast has already earned its character in the field, at altitude, through careful processing. Our role is simply to unlock what the bean has always held.

We roast in small batches, calibrated to each variety's density and moisture profile, so that the natural sweetness, acidity, and body arrive in your cup exactly as nature and our farmers intended.
